Core Value: Food

At Convivium, we have five core values that help guide our work day-to-day: food, community, sustainability, education and hospitality. 

Over the next several weeks, I’ll be talking about each of these values. 

We believe the food we eat, how it is grown and prepared, and who we enjoy it with all contribute to healthy, fulfilled lives. This idea reaches far beyond nutrition labels or calorie counts—it’s about connection. Connection to the land, to the people who grow our food, and to one another around the table.

When we pay attention to how food is grown, we begin to understand its true value. Farming practices that honor the soil, water, and seasons don’t just produce better ingredients—they support ecosystems and communities. As chef Dan Barber has said, “The farm is the source of all flavor.” When ingredients are cultivated with care, they carry a depth and integrity that no amount of processing can replicate.

Preparation matters, too. Cooking is an act of transformation, but also of intention. Whether it’s a simple weeknight meal or a celebratory feast, how we prepare food reflects how we value it—and ourselves. Thoughtful cooking invites us to slow down, to engage our senses, and to take pride in nourishment that is both physical and emotional.

And then there is perhaps the most meaningful element: who we share our food with. Gathering around a table fosters belonging and conversation in a way few other rituals can. Food becomes a vehicle for storytelling, laughter, and understanding. These shared experiences build stronger relationships and deeper community ties.

Michael Pollan famously advised, “Eat food. Not too much. Mostly plants.” While simple, this guidance points us back to a more mindful, grounded way of eating—one that emphasizes quality, balance, and awareness.

Ultimately, a fulfilled life is not built on food alone, but food is a powerful thread that ties together health, environment, and human connection. When we honor that, every meal becomes an opportunity to live more fully.
