Kopytka (literally “little hooves”) are a kind of potato dumpling in Polish cuisine. They are similar to Italian gnocchi or German Schupfnudel. These are spring, green kopytka made with local spinach mixed into a dough. Served with creamy mushroom sauce and a side of coleslaw. Vegetarian. Freezes well.
