Sauces Made Simple – Cancelled

In the 19th century, Marie-Antoine Carême anointed Béchamel, Velouté, Espagnole, and tomato sauce as the building blocks for all other sauces. Hollandaise was added to the family later on and since then, these five sauces have been considered the Five French Mother Sauces. In this class, Convivium Chef Saralyn will cover these five base sauces and the formulas and techniques that make them – a roux, an emulsifier, and a reduction.
You will then make three of the five sauces including a Béchamel, perfect for making creamy homemade macaroni and cheese; Hollandaise, almost like a fancy mayonnaise that is delicious drizzled over asparagus or eggs; and Tomato, which may be the most common mother sauce, but few of us make from scratch. All sauces will be sampled during class and recipes will be provided to take home.
