Knife Skills & Sharpening – FULL

A sharp knife and strong knife skills can dramatically shorten the time you spend in the kitchen and give you the confidence to tackle any recipe. In this knife skills class, Convivium chef, Tomas, will take you beyond dicing and julienne, exploring some advanced knife techniques, the best use for different knives, knife safety, and a demonstration of best practices when conquering those intimidating foods like butternut squash.
Skills will be put to use making a homemade mirepoix, a flavor base used in a variety of stocks, soups, stews and sauce recipes; which each participant will take home with them!
Knife sharpening expert, Paul Opperman, will also be available to sharpen any of your own personal knives for an additional small fee per knife (optional). No serrated knives, please.
