Ask the Butcher, Intro to Meat Cuts

Have you ever wondered what to ask your butcher at the meat counter? Join us for Ask the Butcher! This fun introductory course, taught by Mark Gates, will feature information on primal cuts of meat – what they are, what they can be used for, and how you can save money and gain confidence asking questions at the meat counter. Mark will also show you how to bone, skin, and fabricate a whole chicken as well as explain the uses and care for your kitchen knives. Bring your questions and your own kitchen knife to be sharpened.

Instructor Bio: Mark Gates started his career as an apprentice retail meat cutter in Chicago in 1977 after graduating Washeburne Trade School (Meat Cutting & Retail Management). His traditional training and 45 years of butchery experience includes working and managing for large grocery retailers including Hy-Vee, Jewel Foods and Mariano’s.
