One of the areas of Convivium that we are looking forward to launching is our coffee shop. Officially called The Coffee House at Convivium, we have been hard at work behind the scenes designing, planning and building.

The Coffee House will be located in one of the most iconic parts of the property – the little building with the craggly limestone façade and green tile roof. The size and location on the site just cried out “coffee shop!”.

Mike and I have talked a lot about the format and menu for The Coffee House and we had a number of priorities that we feel are important and reflect the mission of Convivium, which is to ‘create community around food’.

Our Goals
The first priority is that The Coffee House has to be approachable by folks of all ages and from all walks of life. To that end, we have decided (at least initially) to forgo espresso-based drinks and simply offer a good quality, tasty drip coffee.  For those that want something a little stronger, we can brew up something stronger in a French Press.

We will also be open daily from 6 am to 2 pm weekdays and 8 am to 2 pm on weekends.

Our second priority is to keep things simple and avoid the need for too many choices. So in terms of food, we will be offering a daily muffin, a daily quiche and a daily soup or salad, depending on the season.

Our third priority is that we want the space to be ‘state changing’, meaning we want customers experience a sense of well-being when you come into The Coffee House. And that could mean many different things – perhaps you’ll enjoy the art, or the Sunday New York Times or sitting by the fireplace, or visiting with Mike behind the counter or catching up on your email – whatever floats your boat, we hope that The Coffee House can be that place for you.

Construction Process
The remodeling of this space is coming along slowly, but surely.

The Coffee House will open up on to a sizeable outdoor patio with a fireplace. We will also have indoor seating both in the The Coffee House and by the indoor fireplace in the Event Center.

when we first bought the place. We hung onto these for quite some time knowing we would find just the perfect place for them. And we did! We are going to put them back on the ceiling in a sort of floating, drop ceiling arrangement.

Next, we will construct the retail counter/bar area. This will be built to suit right on site.

Coffee equipment has been ordered and should be arriving in the next week or two, but we still have several weeks (and likely longer) before we can open. There are many moving parts to this project, that’s for sure.
